I have been experimenting lately with a low carb diet or keto-diet and this was one of my favorite and filling lunches! Simplicity is best and this is Simple! Not necessary a true recipe more so great foods to eat if you are low-carb.

Ingredients
  

  • 1 cup Red bell pepper washed and chopped
  • 1/2 cup cottage cheese full fat
  • 1/4 cup macadamia nuts
  • 1/2 cup cucumber washed and chopped
  • 3 dill pickles small
  • 8 kalamata olives
  • pepper to taste on cottage cheese

Instructions
 

  • Wash & Chop Cucumbers & Bell Pepper.. put everything on a plate & enjoy! Less than 10g carbs for this plate!
