Pumpkin-Apple Breakfast Muffins

All things fall are in this clean and delicious muffin! When the weather starts to turn and you are craving everything pumpkin spice and then add the apple combo this is the perfect way to start your morning! Kid approved and no added sugar, even better these are dairy & grain free!

Ingredients
  

  • 1/2 cup unsweetened applesauce I use one of my kids organic pouches!
  • 1 cup pumpkin puree store bought is fine (just make sure its pure pumpkin - not pumpkin pie mix!)
  • 3 organic eggs whisked
  • 1/4 cup maple syrup or could do coconut sugar or organic brown sugar
  • 1 cup ground oat flour take organic oats and pulse in food processor
  • 1 cup almond flour
  • 1 tsp baking soda
  • 1 1/2 tsp pumpkin spice mix see below if you want to make your own!
  • 1/4 tsp Sea salt
  • 2 scoops vital proteins collagen peptides OPTIONAL
  • 1/4 cup walnuts OPTIONAL: chopped (I love the crunch!)
  • 1 cup apple OPTIONAL: diced into small pieces - for added sweetness we put these in the bottom of the liners then filling on top!

Home-Made Pumpkin Spice Mix ***This will leave you with extra!

  • 3 tbsp ground cinnamon
  • 2 tsp ground ginger
  • 2 tsp nutmeg
  • 1 1/2 tsp allspice
  • 1 1/2 tsp ground cloves

Instructions
 

  • Pre-heat oven to 350
  • Whisk eggs and then combine wet ingredients into bowl: applesauce, pumpkin puree, maple syrup.
  • In a separate bowl combine dry ingredients: oat flou, almond flour, baking soda, salt, pumpkin spice mix, vital proteins (if adding in!), chopped walnuts (if adding in)
  • Combine wet and dry ingredients together. If using chopped apples place in bottom of liner or mix in. Place mix in muffin liners. Bake in oven for 20-25 minutes or until knife comes out clean.
  • Store in fridge after cooling for up to 5 days or freeze if batch making! We ate our ours in 3 days kids loved them! I actually liked them second day better with a little almond butter or maple butter on the top!

Notes

Need a full on fall recipe to batch make for you/ your kids breakfast? THIS IS IT!  A great way to use up apples/ pumpkin if you are stocking up during the fall. These can be enjoyed anytime of the year but I crave these when the weather starts to turn!
