Mediterranean Bowls
I love the flavors in this bowl and it's a perfect way to use the rest of the summer's cucs, tomatoes and onions! Lots of options to add to this bowl and prep it ahead for an easy lunch or dinner throughout the week.

Meat balls
- 1 lb ground lamb or protein of choice could use ground beef, turkey, chicken
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp sea salt
- 1/8 tsp cayenne optional
- 1/4 tsp cracked pepper
- 1/2 tsp paprika
- 2 cloves minced garlic
- 1 tbsp flat leaf parsley chopped
- 1/4 cup onion minced
- 1 egg whisked
- 1/4 cup bread crumbs / almond flour
Salad Toppings - all are optional and ideas use what you have!
- 4 cups romaine lettuce chopped
- 1/2 cup red onion sliced
- 1/2 cup feta cheese optional add in love the saltiness this brings!
- 1/2 cup mixed olives any olives work here totally optional
- 2 cups sliced cherry tomatoes
- 2 cups sliced cucumbers
- 4 whole pitas love this for dipping and scooping - I use my sourdough tortilla recipe for these!
- 8 tbsp hummus
Tzatziki
- 1 cup greek yogurt
- 1/3 cup cucumbers shredded on a cheese grater fine
- 2 tbsp lemon juice from a fresh lemon
- 1 tsp sea salt
- 1 tbsp fresh dill
- 1 clove garlic mined more if you'd like
- 1/2 tsp cracked pepper
Meatballs
Turn oven on to 425
Mix all your spices and your lamb or protein together and form golf ball sized balls or 2tbsp of meat mixture and place on cast iron or a sheet pan
Bake for 8-10 minutes until internal temperature is 145.
If you'd like to make ahead you can and then just reheat in the pan to brown them up for easy lunches / dinners.
Assemble
Chop your romaine, onion, tomatoes and cucumber (can prep this ahead of time).
Get our your feta, olives, pitas and hummus and have everyone assemble their bowls. Enjoy!
