Broiled Salmon Bites Bowl
This new spin on a poke bowl with broiled salmon and pickled cucumbers is delicious and great to make for the week for quick dinners or lunches!

Salmon Bites
- 1 16oz wild caught salmon or steel head trout cut into cubes with the skin on
- 1 tbsp organic miso paste
- 1 tbsp organic maple syrup
- 1/2 tbsp tamari or soy sauce
- 1 tsp toasted sesame seed oil depends on how much sesame you like this can be strong depending on your brand so start with 1/2 tsp.
- 1 whole garlic clove grated or minced
Spicy Cucumber Salad
- 1 large Japanese cucumber or seedless cucumber chopped 1/2 inch thick at an angle
- 1 pinch sea salt
- 1 tbsp rice vinegar
- 1 tbsp soy sauce
- 1/2 tsp toasted sesame seed oil
- 1 pinch Korean chili flakes or red pepper flakes could use chili onion crunch if you have it
- 1/2 tbsp maple syrup
- 2 whole scallions cut or chopped to the white parts
Spicy Mayo
- 1/2 tbsp sriracha sauce you can always add more depending on your spice level!
- 2 tbsp homemade mayo or the one you like to use
Other
- 1 cup cooked rice I use organic brown basmati
- 2 tbsp cilantro chopped for topping
- 4 whole Hakurei turnips shaved with the mandolin thin or sliced thin
- kimchi optional for a topper
- Furikaki optional for a topper - can be found at trader joes (seaweed sesame seeds)
Miso Maple Marinade
Mix together the Miso, Maple Syrup, soy sauce, sesame seed oil, chili flakes and minced garlic.
Add the salmon bites and stir to coat.
Let sit while you prepare the cucumber salad. If you are not using it right away you can store in the fridge until later. I haven't stored it for more than 5hrs.
Turn your broiler on High
Spicy Cucumber Salad
Chop your cucumbers and sprinkle with sea salt set aside
Whisk together the rice vinegar, soy sauce, sesame seed oil, maple syrup and scallions
Pour over the cucumbers and stir together. This can sit while you make the salmon and your bowl to enhance the flavor.
Assemble
Add in your rice
shave or slice your turnips could do radish or carrots too!
