Peach Salsa Fish Tacos

When Peach season is here you MUST put them in everything! The simple sweetness of the peach compliments the savory spiciness of the fish for these simple but gourmet looking tacos!

Ingredients
  

Fish

  • 2-3 medium white fish filets Cut into 4 pieces (tilapia / flounder are great for this!)
  • 1/2 tsp Sea salt
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1-2 tbsp lime juice 1/2 of a lime usually works - fresh is best
  • 1/2 cup shredded coconut optional to coat fish (unsweetened and toasted in pan for a minute or two until slightly brown)
  • 1 egg whisked to coat fish with coconut

Salsa

  • 2 medium bell peppers chopped
  • 2 green onions chopped (white or red onions would work too 3 tbsp worth)
  • 3 tbsp fresh cilantro chopped
  • 2 tbsp lime juice one lime usually works - fresh is best
  • 2 large ripe peaches
  • 1/2 tsp Sea salt or more to taste
  • 1/4 tsp red pepper flakes optional or can use 1/2 jalepeno without the seeds chopped fine for more heat.

Other

  • 8-10 tortillas we love siete foods or simple corn tortillas work too
  • 2 ripe avocado because duh avocado!

Instructions
 

  • Cut fish and pat dry. Marinate cut up fish with chili powder, cumin, salt, lime juice in fridge for 20 minutes- hour while you prep salsa.
  • Turn oven on to 375
  • Toast your coconut flakes if you want to use them on the fish (I love the added sweetness & texture this gives the fish but not necessary!
  • Make your salsa! Combine all ingredients in a bowl and let the magic happen with salt and lime juice! Set aside.
  • Bake fish (coat with egg & toasted coconut if you'd like now) and place in oven for 5 minutes on parchment paper. Flip and bake for 4 minutes more. Turn on broiler to get a golden finish for 1-2 minutes (WATCH THIS!)
  • Fill 1 tortilla with a fish filet, peach salsa, avocado! I love to add any extra greens to these as well!

Notes

Great way to use either the salsa recipe or the fish recipe and get creative! Let me know if and how you get creative here! You can NEVER go wrong with tacos!
