Instructions
Rice
Rinse and prepare your rice. I usually do this ahead of time and store in the fridge to save time. If you haven't checked out the Par-Boil method that is the method I use.
Salmon Bites
Pat dry your salmon / trout and use sharp kitten scissors or a knife to cut into 1- 1 1/2 inch cubes with the skin on. Set aside while you make your marinade
Miso Maple Marinade
Mix together the Miso, Maple Syrup, soy sauce, sesame seed oil, chili flakes and minced garlic.
Add the salmon bites and stir to coat.
Let sit while you prepare the cucumber salad. If you are not using it right away you can store in the fridge until later. I haven't stored it for more than 5hrs.
Turn your broiler on High
Spicy Cucumber Salad
Chop your cucumbers and sprinkle with sea salt set aside
Whisk together the rice vinegar, soy sauce, sesame seed oil, maple syrup and scallions
Pour over the cucumbers and stir together. This can sit while you make the salmon and your bowl to enhance the flavor.
Spicy Mayo
Whisk together your sriracha and mayo
Broil Salmon Bites
Place on a parchment paper or pan that you coat with a little avocado oil (higher smoke point)
Watch them they only take 3-5 minutes
Assemble
Add in your rice
shave or slice your turnips could do radish or carrots too!
