Sourdough Discard Granola
We are obsessed with this new creation and I think you're going to love it! I love the chucks in granola so let's make one big chunk! Chop it up as you like and top your favorite yogurt or just eat as is!

Cook Time 35 mins
1 cookie sheet / sheet pan
2 mixing bowls one for wet and one for dry ingredients
1 spatula to stir and to spread granola
Dry Ingredients
- 2 cups organic rolled oats optional: to toast in the oven for 5 mins as you prep ingredients
- 2/3 cup whole cashews I used raw
- 1/3 cup pumpkin seeds
- 1 tsp cinnamon
- 1/2 tsp sea salt
- 1/2 cup walnuts - chopped
Wet Ingredients
- 1/2 cup sourdough discard doesn't hav to be active
- 1/4 cup maple syrup
- 1/4 cup organic brown sugar could use coconut sugar
- 1/4 cup coconut oil
- 1 tsp vanilla
- 2 tbsp ground flax seed
- 1 tbsp miso -optional optional but gives a really cool umami flavor!
Turn oven on to 300
Toast your oats on your sheet pan / cookie sheet for 5 mins until fragrant
Mix the dry ingredients together

Combine both wet and dry and then spread out evenly on a sheet pan - I don't grease the pan or put parchment down but you could
Place in the oven 300 for 30-40 minutes depends on how crispy you like your granola. I take mine out at 35 mins.
