1cupchopped tomatoesI like the cherry ones for this salad
1cupchopped cucumbers
1cupyellow squashcan use zucchini too!
1/4cupdiced red onion
1cupdiced bell peppers
18ozpackage of halloumi cheese cut lengthwise and grilled for 3-4 minutes then cubed.optional but I love the added saltiness
Salad Dressing
1/3cupolive oilcan use avocado oil too
1/6cupwhite vinegar
2-3wholegarlic cloves minced
1/2tspcracked pepperto taste
1tspsea salt to taste
1tbspsugar
1tbspfresh herbs (basil, oregano, thyme)whatever you like! or 1 tsp dried
Instructions
Bring large pot of water to a boil, add in salt and cook 12oz of your favorite pasta to al dente!
If you're adding Halloumi cheese to this which I suggest you do! Slice the 8oz pack and grill on a pan at medium heat for 3-5 minutes until golden brown. Set aside and let cool then chop into cubes and set aside.
While pasta is cooking chop your veggies and add to a big mixing bowl.
To make your dressing add your ingredients to a mason jar and then shake it until it's incorporated!
Drain pasta and let cool, then add to your mixing bowl with your veggies. Add in you halloumi and pour on your dressing. Toss to combine and store in the fridge until you're ready to eat or serve immediately.Enjoy!
