Peanut Butter Apple Baked Oats
This is my good friend Taylor's recipe and one of our go-to's in the fall and really whenever we need to get a quick breakfast on the table we can make ahead. My kids also love this one for a snack after school Bonus!

- 2 tbsp ground flax
- 2 cups rolled oats
- 1/4 cup maple syrup
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp sea salt
- 1 3/4 cup milk of choice I use califia unsweetened almond
- 3 tbsp coconut oil
- 1 tsp vanilla
- 1/3 cup chopped walnuts
- 1/2 cup peanut butter (unsweetened)
- 2-3 medium apples chopped into cubes We use honey crisp pink lady or jonagolds ,I like to do some on the top in half moon shapes
Preheat the oven to 350. Grease an 8x8 pan by rubbing coconut oil around the bottom and edges and set aside.
Make the flax egg: combining 2 TBSP ground flax plus 5 TBSP of water in a small bowl, and set aside for approximately 5 minutes.
Combine all of the dry ingredients (oats, baking powder, cinnamon, walnuts and salt) in a large mixing bowl.
In a small mixing bowl, combine all of the wet ingredients (almond milk, maple syrup, coconut oil, vanilla, peanut butter and flax egg).
Add wet ingredients to dry ingredients and mix well. Stir in chopped apples. Pour into pan.
Bake for 25-35 minutes until the edges are golden. Let cool for at least 5minutes before serving. Enjoy!
