Peanut Butter Apple Baked Oats
This is my good friend Taylor's recipe and one of our go-to's in the fall and really whenever we need to get a quick breakfast on the table we can make ahead. My kids also love this one for a snack after school Bonus!
Equipment
- 1 8" baking pan 9x13 baking pan works too but takes less time!
- 1 large bowl
Ingredients
- 2 tbsp ground flax
- 2 cups rolled oats
- 1/4 cup maple syrup
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp sea salt
- 1 3/4 cup milk of choice I use califia unsweetened almond
- 3 tbsp coconut oil
- 1 tsp vanilla
- 1/3 cup chopped walnuts
- 1/2 cup peanut butter (unsweetened)
- 2-3 medium apples chopped into cubes We use honey crisp pink lady or jonagolds ,I like to do some on the top in half moon shapes
Instructions
- Preheat the oven to 350. Grease an 8x8 pan by rubbing coconut oil around the bottom and edges and set aside.
- Make the flax egg: combining 2 TBSP ground flax plus 5 TBSP of water in a small bowl, and set aside for approximately 5 minutes.
- Combine all of the dry ingredients (oats, baking powder, cinnamon, walnuts and salt) in a large mixing bowl.
- In a small mixing bowl, combine all of the wet ingredients (almond milk, maple syrup, coconut oil, vanilla, peanut butter and flax egg).
- Add wet ingredients to dry ingredients and mix well. Stir in chopped apples. Pour into pan.
- Bake for 25-35 minutes until the edges are golden. Let cool for at least 5minutes before serving. Enjoy!
