Pre- Cook your chicken thighs / chicken breast and chop them up fine
I like to throw the chicken breast in a pan with curry powder and a little ghee to bring out the flavor and let cool. This is optional you can just use cold chicken chopped.
Chop celery, walnuts, herbs and add those to the bowl with the cooled chicken. Stir in raisins and mayo. Add in your curry powder to taste along with the sea salt and pepper.
Serve cool over some fresh greens or eat as is. Enjoy!
