One Pot Whole Chicken

Coming into Fall this has that bone satisfying broth and taste that you crave when the weather starts to turn. Even better it is so easy!

Ingredients
  

  • 1 whole organic chicken I get mine from my CSA but the next best are the pre-brined ones at Trader Joes
  • 5 carrots chopped
  • 1 white onion chopped
  • 5 stalks of celery chopped
  • 1 sweet potato large, chopped
  • 6 cloves garlic minced
  • 1/2 tsp garlic powder anything you have you can season your chicken
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried parsley
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1 tbsp olive oil

Instructions
 

  • Preheat oven to 375
  • Rinse and pat dry the chicken and rub with olive oil then season with your seasonings
  • In a large Dutch oven place the sweet potatoes, carrots, celery, carrots, onions
  • Place the chicken on top of your vegetables and coat with olive oil, season with spices & herbs you have on hand, ingredients list is just a suggestion.
  • Cover and bake for 1 hr 15mins or until the meat thermometer reads 165
  • Remove from oven and let rest 10 minutes then serve in a bowl b/c there will be lots of good chicken broth! Vegetables and broth with chicken on top!

Notes

I love using the 21 seasoning salute from trader joes but any seasonings will work.
**If you do not have a dutch oven or a cast iron dutch oven you can use a large oven safe pot with a lid.
