From Scratch Sonoma Chicken Salad
THIS was incredible and now I crave it every week, especially the days that I need a big protein boost, hydration and a sweet crunch! Try it, double triple batch this on meal prep day!
Equipment
- 1 large bowl
- 1 cutting board
- 1 sharp knife
- measuring tools cups, tsp, tbsp
Ingredients
- 2 whole chicken thighs pre-cooked (roast, poach, sous vide ahead of time)
- 4 stalks celery chop to your liking for a chicken salad
- 1 cup organic grapes cut into halves or quarters
- 1/2 cup pecans finely chopped
- 2 tsp apple cider vinegar
- 2 tsp honey
- 2 tbsp greek yogurt
- 2 tbsp mayo
- 1/2 tsp sea salt
- 1/2 tsp cracked pepper
- 1/2 tbsp poppy seeds optional
- 1 tsp dijon mustard optional
Instructions
- Pre-cook your chicken thighs or chicken breasts. I like to sous vide mine but you can poach, roast yours you want them juicy!
- Chop your celery, grapes, pecans and chicken and toss in a big bowl.
- Mix in your apple cider vinegar, honey, greek yogurt, mayo.
- Add sea salt and pepper to taste and adjust your other seasonings, add in a little dijon mustard and poppy seeds!!
