Summer Pasta Salad
Love this quick and easy pasta salad to use up all your summer veggies! It's a great dish to take to your summer cook outs!
Equipment
- 1 large bowl
- 1 pot to cook pasta
Ingredients
Salad
- 1 box favorite pasta cooked al dente I love Brami for added protein
- 1 cup chopped tomatoes I like the cherry ones for this salad
- 1 cup chopped cucumbers
- 1 cup yellow squash can use zucchini too!
- 1/4 cup diced red onion
- 1 cup diced bell peppers
- 1 8oz package of halloumi cheese cut lengthwise and grilled for 3-4 minutes then cubed. optional but I love the added saltiness
Salad Dressing
- 1/3 cup olive oil can use avocado oil too
- 1/6 cup white vinegar
- 2-3 whole garlic cloves minced
- 1/2 tsp cracked pepper to taste
- 1 tsp sea salt to taste
- 1 tbsp sugar
- 1 tbsp fresh herbs (basil, oregano, thyme) whatever you like! or 1 tsp dried
Instructions
- Bring large pot of water to a boil, add in salt and cook 12oz of your favorite pasta to al dente!
- If you're adding Halloumi cheese to this which I suggest you do! Slice the 8oz pack and grill on a pan at medium heat for 3-5 minutes until golden brown. Set aside and let cool then chop into cubes and set aside.
- While pasta is cooking chop your veggies and add to a big mixing bowl.
- To make your dressing add your ingredients to a mason jar and then shake it until it's incorporated!
- Drain pasta and let cool, then add to your mixing bowl with your veggies. Add in you halloumi and pour on your dressing. Toss to combine and store in the fridge until you're ready to eat or serve immediately.Enjoy!
Notes
Feel free to make this a full dinner by adding some protein!!
