Protein Pancakes 2.0
These are short of incredible and so easy to make for a quick breakfast, packed with 30+ grams of protein to start your day!
Ingredients
Protein Pancake Mix
- 2 large eggs
- 1/2 cup cottage cheese our favorite is good culture
- 1 tbsp maple syrup
- 1/4 tsp sea salt
- 1 tsp baking soda
- 1/3 cup organic flour have not tried gluten free/ oat flour/ almond flour yet.
- 1 tsp vanilla
Blueberry 'Jam'
- 1 1/2 cups frozen blueberries or fresh
- 1 tbsp maple syrup
Instructions
Pancakes
- Set a pan to medium high heat
- Stir up the Protein Pancake ingredients let it sit for 5 mins while your pan heats
- Place a pat of butter or avocado oil in and scoop out 4-6 pancakes in your hot pan - 2 minutes on each side or until the first side starts to bubble.
Blueberry Jam
- Set a saucepan to medium heat and add in 1 1/2 cups of blueberries to start cooking down.
- Add in 1 tbsp maple syrup when they are at their desired consistency - fresh takes 2 minutes, frozen 4-6 minutes.
- Top your pancakes with your blueberries and enjoy!
