Sourdough Discard Granola
We are obsessed with this new creation and I think you're going to love it! I love the chucks in granola so let's make one big chunk! Chop it up as you like and top your favorite yogurt or just eat as is!
Equipment
- 1 cookie sheet / sheet pan
- 2 mixing bowls one for wet and one for dry ingredients
- 1 spatula to stir and to spread granola
Ingredients
Dry Ingredients
- 2 cups organic rolled oats optional: to toast in the oven for 5 mins as you prep ingredients
- 2/3 cup whole cashews I used raw
- 1/3 cup pumpkin seeds
- 1 tsp cinnamon
- 1/2 tsp sea salt
- 1/2 cup walnuts - chopped
Wet Ingredients
- 1/2 cup sourdough discard doesn't hav to be active
- 1/4 cup maple syrup
- 1/4 cup organic brown sugar could use coconut sugar
- 1/4 cup coconut oil
- 1 tsp vanilla
- 2 tbsp ground flax seed
- 1 tbsp miso -optional optional but gives a really cool umami flavor!
Instructions
- Turn oven on to 300
- Toast your oats on your sheet pan / cookie sheet for 5 mins until fragrant
- Mix the dry ingredients together
- Mix the we ingredients together
- Combine both wet and dry and then spread out evenly on a sheet pan - I don't grease the pan or put parchment down but you could
- Place in the oven 300 for 30-40 minutes depends on how crispy you like your granola. I take mine out at 35 mins.
