Sourdough Discard Granola

We are obsessed with this new creation and I think you're going to love it! I love the chucks in granola so let's make one big chunk! Chop it up as you like and top your favorite yogurt or just eat as is!

Equipment

  • 1 cookie sheet / sheet pan
  • 2 mixing bowls one for wet and one for dry ingredients
  • 1 spatula to stir and to spread granola

Ingredients
  

Dry Ingredients

  • 2 cups organic rolled oats optional: to toast in the oven for 5 mins as you prep ingredients
  • 2/3 cup whole cashews I used raw
  • 1/3 cup pumpkin seeds
  • 1 tsp cinnamon
  • 1/2 tsp sea salt
  • 1/2 cup walnuts - chopped

Wet Ingredients

  • 1/2 cup sourdough discard doesn't hav to be active
  • 1/4 cup maple syrup
  • 1/4 cup organic brown sugar could use coconut sugar
  • 1/4 cup coconut oil
  • 1 tsp vanilla
  • 2 tbsp ground flax seed
  • 1 tbsp miso -optional optional but gives a really cool umami flavor!

Instructions
 

  • Turn oven on to 300
  • Toast your oats on your sheet pan / cookie sheet for 5 mins until fragrant
  • Mix the dry ingredients together
  • Mix the we ingredients together
  • Combine both wet and dry and then spread out evenly on a sheet pan - I don't grease the pan or put parchment down but you could
  • Place in the oven 300 for 30-40 minutes depends on how crispy you like your granola. I take mine out at 35 mins.
