Cilantro Avocado Dressing

 

Avocado Dressing

When I have a batch of mayo I usually make this to use some of it up! I love to put this on taco boats, taco salads, use as a vegetable dip, top hard boiled eggs! You can make it as spicy as you want, I also like to add cilantro when I have it (but not everyone in my family loves cilantro).

Ingredients
  

  • 2 avocados
  • 3 tbsp lime juice or lemon juice fresh is best
  • 2 cloves garlic minced
  • 3 tbsp pickled jalapeños more if you want it spicy!
  • 2 tbsp pickled jalapeño juice or you can use water I like mine spicy!
  • 1/4 tsp sea salt or pink Himalayan sea salt
  • 2 tbsp home made mayo
  • 3 tbsp fresh cilantro optional if you have it!

Instructions
 

  • In a high speed blender (blentec / vitamix) put in all ingredients listed and pulse until combined.
  • You will have to thin it so add 1-2 tbsp of water at a time and pulse until you get your desired consistency. You may have to do this a couple of times! I like mine thick so I can spread it and use it like a dip too!
  • Store in fridge with pits of avocado to preserve color up to a week.

Notes

I don't include home-made mayo in my prep time here, so if you have to make that add 15 minutes!
