Home-made Hummus
So many quick recipes out there and most have 5-7 main ingredients and then you can start adding and getting creative. This one is from www.minimalistbaker.com and she uses garam masala which is one of my favorite spices to add to hummus.

Buffalo chicken stuffed peppers
This recipe was inspired from Primally Inspired. It's my personal favorite! I also love to top these with my Cilantro Avocado Dressing! I beef this recipe up by adding chopped celery & carrots to get more filling with less chicken.

Turkey Meatballs with Broccoli over ‘Zoodles’ OR Spaghetti Squash
This one is great to prep night before and simmer meatballs in sauce all day so everything comes together. I like to make my Spaghetti Squash ahead of time too so there isn’t so much water in it. If you have a ton of zucchini on hand you could easily make ‘zoodles’ instead.

Eggplant Pizza
This recipe is from www.detoxinista.com This one has been one of our go-to recipes for a long time now. It’s especially great to make during the summer when Eggplant is cheap at the farmer’s market and you can throw anything you like on here. I love to pair this with fresh greens and dressing.

Chicken curry with veggies and ‘cali fried rice’
This is something I make towards the end of the week and basically just throw in all my leftover veggies to use them up. Get creative with the veggies you have on hand and if you would rather use tofu instead of chicken please do!

Sweet Potato Salmon Cakes
These are from ‘It starts with food’ cookbook and I always double the recipe so the kids/ husband and I can eat these throughout the week. I eat them for breakfast with home-made mayo or throw them in salads as my protein and carb.

Blueberry Coconut Pancakes
Looking for a dairy-free weekend pancake that is healthy?! This is it! I love putting in organic wild blueberries (frozen from Costco) they are so sweet you don't even need syrup! This a recipe from Nourishingdays and I have found it to be my favorite and the kids too!
