Curry Chicken Salad
This easy and flavor packed salad is my favorite for lunch or to take to a picnic!
Equipment
- big bowl
- cutting board
- knife
- frying pan
Ingredients
- 2-3 whole cooked chicken thighs (chopped into small cubes) or breasts work
- 4 whole stalks celery (chopped)
- 1/2-1 tbsp madras curry powder or any curry powder works - might adjust amount depending on how spicy yours is
- 1/4 cup walnuts chopped fine
- 1 tbsp green onions chopped
- 1 tbsp cilantro chopped
- 1/4 cup raisins can use golden raisins too
- 2 tbsp mayo I love my homemade one here
- 1/4 tsp sea salt and pepper to taste
Instructions
- Pre- Cook your chicken thighs / chicken breast and chop them up fine
- I like to throw the chicken breast in a pan with curry powder and a little ghee to bring out the flavor and let cool. This is optional you can just use cold chicken chopped.
- Chop celery, walnuts, herbs and add those to the bowl with the cooled chicken. Stir in raisins and mayo. Add in your curry powder to taste along with the sea salt and pepper.
- Serve cool over some fresh greens or eat as is. Enjoy!
