Almond Butter Cups
These are one of my favorite treats to go with an afternoon espresso! This recipe is from simplegreenmoms.com
Ingredients
- 1 cup almond butter smooth
- 1/2 cup unsweetened shredded coconut optional
- 1 tbsp coconut oil
- 1 cup enjoy life chocolate chips non-dairy
Instructions
- Place almond butter and oil in a bowl and microwave until melted. Add in coconut until combined
- Divide the mixture into lined / greased mini muffin tins (12)
- Place the chocolate chips in the glass bowl and microwave until melted (if you have a Chocolate protein you could combine that with water / coconut oil until you get same consistency….the Vegan Chocolate Shakeology works great!)
- Pour chocolate mixture on top of almond butter in mini muffin tins and stick in the freezer
- After an hour you can use a knife to scrape around PB cups and pop out! YUM
