Fried Eggs with Leafy Greens
I probably eat fried eggs and greens 5 out of 7 days a week, either for lunch or dinner. I'm kind of obsessed! I love how eggs taste fried in coconut oil, and that is something you may want to play with, if coconut oil isn't your thing use some good ol' fashioned butter!

Cocoa-Nut Cookies

Fancy Cobb Salad

Roasted Root Vegetable Salad
I love this salad for fall when the root veggies are cheap! Roast veggies ahead of time and then just throw in a bowl of greens, top with your favorite dressing. I like Tahini with roasted roots!
